Inspired by a Julia Childs recipe, tomatoes are slowly simmered with onions and fresh fennel, toasted crushed coriander, fennel seed, orange zest and hint of saffron.

It would be perfect atop roasted fish, as a base for a seafood stew, dolloped on some scrambled eggs or tossed with sautéed shrimp and pasta.  Hints of all those flavors come through serving as the perfect complement.  Thin out with a splash of white wine.
